The Faux Pasta House
Salad- but BETTER.
This an extremely simple salad to put together, and tastes just like the Pasta House salad, or Rich & Charlies. I like this one better because I always want more artichokes, and I can just add as many as my heart desires in my own salad.
This recipe is for about 4-6 people, and goes well with Italian type dishes. The print out recipe card is at the bottom of the post! 🙂
You will need:
- Head of iceburg lettuce
- 1 red onion
- 1-2 cans artichoke hearts (whole, half, or quartered will work fine- personally I like the whole ones).
- 1 small jar of Pimientos
- about 2 cups grated Parmesan Cheese
- oil & white vinegar (for the dressing)
- salt & pepper (for the dressing)
Rinse your head of lettuce, chop it up, and run it through the spinner if you have one available, and put lettuce in a nice large mixing bowl.
Slice the whole onion in fairly small slices and add to your bowl of lettuce.
Cut your artichoke hearts into fairly small pieces and toss them in the mix. Strain the pimientos from the juice it sits in from the jar, then add the desired amount ( I add the whole jar).
Add Parmesan cheese to your liking, starting with 1 cup, and just dump it in the mixing bowl.
For the dressing– I would recommend a jar to mix it in that you will be able to close tightly and shake.
Use 1 part oil, to 3 parts vinegar, add a pinch of salt and pepper, close container, and shake vigorously. Do a taste test. Once your taste buds are happy, add the dressing to the salad bowl, and thoroughly mix up your salad.
You can add more Parm cheese if you need to balance out the dressing or just love the cheese like I do. I put the full two cups on top.
Once the ingredients are mixed, I set the bowl in the fridge for at least 20-30 minutes before serving, and vwah-lahh! You have a delicious salad that tastes just like the Pasta House salad. ENJOY!
